This is not an exact recipe, just some trial and error that turned out to be tasty!
Preheat the broiler on the oven and make sure your rack is as high up as it will go. Cut up the sweet potato into fry-sized pieces, leaving on the skin. Line a baking sheet with foil. Place sweet potato fries in a single layer on the foil with a little space in between them.
Brush with EVOO, sprinkle with salt, pepper, and red pepper flakes to taste (more obviously = spicier!). Place pan in oven and broil for 3-5 minutes, turn over and broil for another 3-5 minutes until they are your desired softness/crispiness. Make sure to keep an eye on them so they do not burn!
