These are delicious, inexpensive, and end up tasting a lot like sweet potato fries!

1/4 cup coconut oil
3-4 peeled carrots, peeled and cut into matchstick pieces
- In a large skillet, heat the coconut oil over medium to medium-high heat
- Add the carrot French fries and fry for 6-8 minutes or until the carrots start to crisp and turn brown, turning them often in the hot oil
- Remove the carrots from the oil with a slotted spoon, and sprinkle them with a little sea salt before serving (make sure to do this while they are still hot!)
- These will not be super crispy crunchy like regular potato fries, but the coconut oil and carrots taste so good together!
