Carrot Fries

These are delicious, inexpensive, and end up tasting a lot like sweet potato fries!

1/4 cup coconut oil
3-4 peeled carrots, peeled and cut into matchstick pieces
Sea salt

  1. In a large skillet, heat the coconut oil over medium to medium-high heat
  2. Add the carrot French fries and fry for 6-8 minutes or until the carrots start to crisp and turn brown, turning them often in the hot oilDSCN3404
  3. Remove the carrots from the oil with a slotted spoon, and sprinkle them with a little sea salt before serving (make sure to do this while they are still hot!)
  4. These will not be super crispy crunchy like regular potato fries, but the coconut oil and carrots taste so good together!
