Blueberry Breakfast Stuffed Sweet Potatoes

Another delicious recipe from PaleOMG

2 sweet potatoes, cut in half lengthwise


1 cup fresh blueberries
1 lb ground sausage
1 egg, whisked
Salt and pepper to taste

Preheat oven to 400 degrees. Place cut-side down of sweet potato and place in oven to bake for 25-30 minutes or until soft. While baking, cook sausage, using wooden spoon to break up the meat. Once meat browns, add blueberries and sprinkle in a bit of salt and pepper. Cook down until cooked through.


Discard excess liquid and place mixture in a large bowl. Add your whisked egg and mix to combine.

Using a spoon, remove some of the sweet potato, leaving behind 1/4″ or so of sweet potato so the skin doesn’t break.



Add mixture into skin and bake 8-10 minutes.


Top with a fried egg or scrambled eggs.
