Three-Pea, Cashew, and Chicken Stir-Fry

Some Asian Stir-Fry Influence:  (but no rice or noodles!)

14oz chicken
3 Tbs hoisin sauce
2 Tbs soy sauce
1/2 tsp chile garlic sauce
2 Tbs coconut oil (divided)
1 cup chopped onion
2 gloves garlic minced
1 Tbs grated ginger
8oz sugar snap peas (trimmed)Snow Peas in Process
8oz snow peas (trimmed)

Wisk hoisin sauce, soy sauce, and chile garlic sauce in a small bowl. Cut chicken into 1/2″ cubes. Heat 1 Tbs coconut oil in a large non-stick skillet over medium high heat until it shimmers.

Add chicken and cook until no longer pink inside. Transfer to plate.Chicken cooling

Return the skillet to the heat and add remaining 1 Tbs oil. Stir in the onion, garlic, and ginger. Cook, stirring often, until fragrant (approximately 1 minute). Add snap peas, snow peas, and peas.DSCN3333

Cook, stirring often until bright green (approximately 2-3 minutes). Return chicken to pan along with hoisin mix and cashews. Cook until heated through. Enjoy!
