Thai Chicken Satay with Spicy Peanut Sauce (Paleo-ISH alert)

The peanut in this along with a few of the other ingredients makes it a Paleo-ISH alert.  It is absolutely delicious and great served with some fresh veggies.  This recipe is from the EatingWell website; it is not originally a Paleo recipe but we have tried to add some Paleo alternatives to most of the ISH ingredients below.

Chicken Marinade
3 Tbs lime juice
3 Tbs coconut oil
2 tsp soy sauce or coconut aminos
2 tsp fish sauce
1/2 tsp crushed red pepper flakes
1 lb chicken tenders

Spicy Peanut Sauce
2 Tbs smooth peanut butter (You can also try with almond butter or some other alternative)
2 Tbs coconut milk
1 tsp lime juice
2 tsp soy sauce or coconut aminos
1 tsp brown sugar or coconut sugar
1/2 tsp crushed red pepper (or more, if you like it spicier)

To marinate chicken: whisk lime juice, oil, soy sauce/coconut aminos, fish sauce, and crushed red pepper in a shallow baking dish until combined; add chicken and turn to coat (15 minutes).

Thread each chicken tender onto a wooden skewer and grill approximately 3 minutes per side.

To make spicy peanut sauce: whisk all ingredients together until smooth, serve as dipping sauce (we typically do this while the chicken is cooking).
