Orange Chicken Crocky McCrockerson

Delicious and interesting crockpot that is great to come home to after a long day!

Marinade ingredients:
2 cups chicken broth
6 oz tomato paste
2 Tbs frozen orange juice concentrate
1/4 tsp pepper
2 Tbs soy sauce/coconut aminos
2 Tbs brown sugar
2 cloves garlic, minced
Dash ground allspice
Dash ground ginger
1 tsp salt

Remaining ingredients:
6 chicken breast halves
6-8 oz sliced mushrooms
2 Tbs butter
11 oz mandarin oranges
1 small bell pepper (strips)
1/4 tsp ground ginger
3 Tbs cornstarch/Arrowroot
1/4 cup cold milk
1/4 cup cold water

Combine marinade ingredients in a non-reactive container with lid and blend well. Add the chicken for 6-8 hours (we just do this in the crockpot dish for fewer dished to clean!).


Place marinaded chicken in the slow cooker. Add marinade to cover chicken. Saute mushrooms in butter and add to chicken/marinade. Cover and cook on low for 5-6 hours. About 1 hour before dinner, add mandarin orange sections, green pepper, and ginger–stir well. When done, mix together cornstarch/Arrowroot, milk, water; add while stirring. Cover and cook (approx 15 minutes).
