We got this recipe from a Greek friend of mine after she cooked it for us and we couldn’t get enough!
1 cup quinoa
2 cups water
10oz frozen spinach (thawed)
6oz crumbled feta
1 cup grape tomatoes (sliced in half)
1 can black beans (drained and rinsed)
1/2 cup cucumber (skinned and diced)
1/2 cup sliced pepperoncinis
1 lb chicken, cubed
3/4 cup extra virgin olive oil
Bring quinoa and water to a boil, reduce heat. Cover and simmer 12-15 minutes or until water is absorbed, remove from heat.
Pour olive oil over mixture and toss to coat, Refrigerate approximately 1 hour before serving.
Can be a main dish, side dish, snack, or lunch leftovers!
