One of our staples, we love us some CSP Hash.

1 lb chicken
½ white onion (diced)
1 medium sweet potato (peeled and diced)
¼ lb bacon (chopped)
Herbs (oregano, tarragon)Salt and pepper to taste
Lemon
2 eggs
Cook bacon to crisp over medium heat—don’t drain the fat from the pan. Sear the chicken in bacon fat, seasoning with salt and pepper. Add the onions.
When onions come up to temp, add the sweet potatoes. Cook over medium low heat for 15-20 minutes or until the sweet potato becomes tender and caramelize.
Just before serving, add and mix the juice of a lemon and the chopped herbs. Top with 2 eggs, any style and enjoy!
