Chicken, Charred Tomato, and Broccoli Salad

This is from the Eating Well website–a Jay favorite and great to make in big batches for lunches, leftovers, and parties!

1-1/2 lbs chicken
4 cups broccoli
1-1/2 lbs medium tomatoes
2 Tbs EVOO
1 tsp sea salt
1 tsp black pepper
1/2 tsp chili powder
1/4 cup lemon juice

Boil chicken in a shallow pan and shred. Steam broccoli so it is al dente–drain and rinse until cool. Core tomatoes and cut in half lengthwise. Remove the seeds and drain for 5 minutes on paper towel to remove any excess liquid. Heat the pan until very hot–brush tomatoes with oil (1 Tbs) and cook 4-5 minutes or until charred on both sides. Remove.

Heat remaining 3 Tbs oil in pan over medium heat. Stir in salt, pepper, and chili powder and cook, stirring constantly (45 seconds or until fragrant). Slowly pout in lemon juice then remove pan from heat–add mixture to bowl with chicken, tomatoes, and broccoli to cover. Chill.
