Mom’s Meatloaf (Paleo-ISH alert)

Recipe from Jay’s mom and a childhood favorite!

1-1/2 lbs lean ground beef
1 egg
3/4 cup oatmeal (not instant)
8 oz can tomato sauce
1 tsp onion salt
1/4 tsp black pepper
2 Tbs brown sugar
2 Tbs Worcestershire sauce

Preheat oven to 350 degrees. Lightly spray a pie pan with cooking spray. In a mixing bowl, lightly beat egg. Add ground beef, oatmeal, onion salt, pepper, and half of tomato sauce. Mix well and form into loaf shape and place into prepared pie pan. With your fingers, press and indent the middle of the loaf to hold the sauce on top.


With the remaining tomato sauce, mix brown sugar and Worcestershire sauce in the tomato sauce can. Stir well and pout onto top of prepared meatloaf.


Bake 60-70 minutes. Allow to rest 5-10 minutes before slicing and serving.
