Perfect dinner for a Friday night! For the chicken kebabs we used cubed chicken, sweet peppers, and sweet potatoes. Cut everything up and put it all in a bowl–added some extra virgin olive oil, salt, pepper, and garlic salt.
On the side, J made up a delicious Caprese salad! Sliced up some fresh mozzarella and a juicy tomato. Put the slices of both on a bed of baby spinach and topped it all with balsamic vinaigrette and basil.
