Breakfast for Dinner August 3, 2013

Breakfast for dinner is an absolute favorite for both of us!  We did it a littler differently than normal this time, cooking up Blueberry Breakfast Stuffed Sweet Potatoes (from PaleOMG) with a side of bacon.  The blueberry sweet potatoes are stuffed with blueberries and ground sausage and topped with any style egg (scrambled eggs are easy to mix in with everything else).

The flavor from the sweet potato and blueberries goes so well together–a great substitute for the sweetness of syrup on pancakes.  We like to do the second round of baking for 15 minutes instead of the recommended 8-10 minutes because Elle doesn’t want to be able to taste the eggs in it at all.  We have made this one quite a few times and will continue to make it because it is delicious!DSCN3472
