This dinner is so easy, it is perfect for a lazy Saturday night! Tonight we made it sans-eggs since tomorrow night’s dinner is breakfast. On the side is a salad with Parmesan cheese, tomatoes, avocado, and balsamic dressing along with a fruit bowl (blueberries, strawberries, and white peaches). The Chicken Sweet Potato Hash recipe is one of the first actual Paleo recipes we ever tried. Elle didn’t used to be much of a sweet potato fan but the saltiness of the bacon really turned her around on sweet potatoes! Now we eat them all the time 🙂 Enjoy!!
